Dinner 9: BBQ Rice Wrap

Hey Readers!

I’m flying solo again this week, though maybe Giggles will have a chance to make this meal and comment on it when her life settles down a bit.  She has so many classes and tests!  Ridiculously busy!

This week I went with something easy and yummy.  I’ve never been much of a wrappist, but I think I could become one.  I made a wrap thing this week that turned out delicious!  I’ll call it a BBQ Rice Wrap.

BBQ Rice Wrap
Ingredients
1 Tbs vegetable oil
½ onion, diced
½ green pepper, diced
1stalk celery, sliced
1 large carrot, sliced
Handful of mushrooms, diced
1 cup 10 minute brown rice (2 cups cooked)
BBQ Sauce
Spinach leaves
Wrap

Directions
1.) Sauté the onion, green pepper, celery and carrot in vegetable oil on medium-high (6-10 minutes).  Meanwhile, cook brown rice according to box instructions.
2.) Add the mushrooms and sauté another 3 minutes.
3.) Reduce heat to low.  When rice is finished, combine with the vegetables in the pan.  Add desired amount of BBQ sauce and stir.
4.) Place on choice of wrap and serve with spinach leaves.  Enjoy!

Preparation Time: 20 minutes
Makes 2 big wraps

This is one quick recipe that tastes great!  And it’s easy to double the recipe so you can have leftovers to reheat and enjoy later in the week.  I’d have to rate this 5/5.  Sorry, I forgot to take a picture before I devoured it.  Next time I make it I’ll get a picture of it.

I watched a number of movies since my last post.  And they were all really good.  I watched Black Swan, The Social Network, and this past Thursday I watched The Fighter.  All these were at least nominated for Academy Awards (maybe they all won something, but I don’t keep up with that sort of thing).  And I can see why they were nominated.  These were all good quality movies that are worth watching.

I really liked Black Swan, and not just because I’m a fan of Natalie Portman J  It has a bit of a Fight Club feel to it, since it’s dark and the character deals with psychological issues.  Towards the end it gets really intense and really creepy.  It was freaking me out!

In other news, last weekend’s cleanse went well.  I did three days with just fruits and vegetables.  That first day was tough, since I hadn’t cleansed for awhile.  My body was ridding out a lot of toxins and I was peeing all day!  It’s a beautiful thing to say goodbye to all that junk that was clogging my insides.

I’m proud to say that I ate a salad on all three days.  I also made a batch of my Packers Championship Soup which I made for Dinner 5.  I had that everyday of the cleanse as well and it was delicious!  Of course, my diet was filled with lots of potatoes too.  I probably averaged at least two potatoes a day.  I also ate bananas, apples, oranges, dried papaya, dried figs, and over a pound of banana chips, haha.

I came out of the cleanse feeling like I normally do: happy with my body and excited for some grains!  It definitely reaffirmed my appreciation for food and made me more aware of what I’m putting in my body.

And as for my goal to become an early riser, well I’m still working on it.  Some days just don’t allow it because I can’t get to bed until 2 AM.  But I’m waking up at 6 AM more often and it’s been good.  I usually get more work done on those days and I tend to have more energy.  So I certainly see the benefits of waking up early, and I’m going to continue to try and make it a long term habit.  Everyday for the next week I’m going to set my alarm for 6 AM, and I’m going to get up smiling (even if I have to force a smile J).

My new focus for this week is eating a salad or sautéed veggies everyday.  As I’ve mentioned before, I’m not a big salad eater.  But it’s not because I don’t like salads.  I don’t know why I don’t eat many salads.  Maybe I just don’t have a pleasant feeling towards salads, which is why I want to teach myself to like them.  I like salads!  If you say something enough, or think about something enough, it will happen because your thoughts define your reality.  If you want to have a good life, you need to have a positive attitude.  I just read an article by Steve Pavlina on The Law of Attraction.  One of the quotes I like is, “Your reality is exactly what you think it is.  Whenever you think about anything, you summon its manifestation.”
